Add the onion and peppers to your slow cooker, add the garlic, ginger, lime zest and juice. Add the curry powder and turmeric, then add the coconut milk, stock and cornflour mix, stir really well. Place the chicken breasts in the pot, stir them in well so the liquid just covers over the top of them, pop the lid on and slow cook for around 5-6 hours.
Just before serving add the spinach and a sprinkle of desiccated coconut.
Goes well with rice or flat breads.
